Greek Yogurt Key Lime Pie Bars with

  • 6 whole graham crackers
  • 2 tablespoons unsalted butter, melted
  • 6 ounces cream cheese, softened
  • 1 5.3oz Light + Fit Key Lime Greek Nonfat Yogurt
  • 13 cup granulated sugar
  • 1 egg and 1 egg white
  • Pinch of salt
  • 1 tbsp lime zest
  • 14 cup fresh key lime juice
  • 1 12 teaspoons vanilla extract
  • 2 tablespoons all purpose flour
Instructions
  • Step 1 Preheat oven to 350° and line an 8×8 baking pan with parchment paper.
  • Step 2 Place the graham crackers in a food processor and pulse until finely ground. Add in the melted butter and pulse again until the crumbs are moist.
  • Step 3 Pour the crumbs into the pan and press them into an even layer. Bake the crust in the oven for 6-7 minutes. Remove from the oven and let cool. Then, reduce the heat to 300°.
  • Step 4 Beat the softened cream cheese with an electric mixer until light and fluffy, about 2 minutes. Add in the Light + Fit Key Lime Greek Nonfat Yogurt, sugar and pinch of salt and beat again until smooth.
  • Step 5 Add in the egg and egg white and beat until smooth. Add in the lime zest, lime juice and vanilla and beat until smooth. Add in the flour and beat until smooth.
  • Step 6 Pour the filling on top of the cooled graham cracker crust then place it on the middle rack of the oven. Bake for 30 minutes or until the cheesecake is set.
  • Step 7 Allow the bars to cool completely before refrigerating them for at least 3 hours. Garnish with lime wedges and enjoy!
