Coco Avocado Crunch Toast

Greek Toasted Coconut
Vanilla nonfat yogurt (5.3 oz)

2 ripe medium avocados, pitted, meat mashed

2 Tbsp. minced fresh cilantro, divided

1 tsp. minced scallions

1 tsp. Sriracha pepper sauce

4 pieces of whole grain bread, toasted

112 Tbsp toasted shaved unsweetened coconut

  1. In a bowl, mix together yogurt, mashed avocados, 12 cilantro, scallions and Sriracha.
  2. Spread each piece of toast evenly with avocado-yogurt mixture.
  3. Top each piece with a sprinkling of remaining cilantro and toasted coconut to garnish.
