Coco Avocado Crunch Toast

  • 1 container Light & Fit
    Greek Toasted Coconut
    Vanilla nonfat yogurt (5.3 oz)
  • 2 ripe medium avocados, pitted, meat mashed
  • 2 Tbsp. minced fresh cilantro, divided
  • 1 tsp. minced scallions
  • 1 tsp. Sriracha pepper sauce
  • 4 pieces of whole grain bread, toasted
  • 112 Tbsp toasted shaved unsweetened coconut
Instructions
  • Step 1 In a bowl, mix together yogurt, mashed avocados, 12 cilantro, scallions and Sriracha.
  • Step 2 Spread each piece of toast evenly with avocado-yogurt mixture.
  • Step 3 Top each piece with a sprinkling of remaining cilantro and toasted coconut to garnish.
